After the chocolate has totally melted, go ahead and take glass bowl off the heat and Carefully stir it by using a rubber spatula because it cools; make sure to scrape the perimeters. Given that the chocolate starts to cool and thicken somewhat, quickly proceed to the subsequent stage.  Cool
